Looking to treat yourself to a delicious, protein-packed breakfast after a long workout? These are the pancakes for you! They are packed with healthy protein and carbs to help rebuild muscle and replenish energy levels so you can have a focused, productive day! Not to mention, they are gluten free and vegan!
Serves 1 very hungry person (makes 5.5 DVD-sized pancakes)
Gluten Free, Dairy Free, Nut Free, Vegan
Ingredients:
- 1/4 cup buckwheat flour
- 1 scoop vanilla protein powder (about 30g)
- 2 tbsp raw cacao powder
- 1/2 ripe banana, MASHED
- 1 tsp sweetener of choice (I used coconut sugar)
- 1/2 tsp baking powder
- 2/3 + 1 tbsp non-dairy milk of choice
Directions:
In a mixing bowl, combine flour, protein powder, cacao powder, sugar, and baking powder, mixing until well combined. Pour in the milk and whisk until clumps are gone and the batter is smooth. Then, add the mashed banana and whisk again.
Heat a skillet over medium-low heat and melt a little coconut oil to coat the bottom. Once the pan is hot, pour about 1/4 cup of the batter onto the pan and cook until bubbles form on the top. Flip and cook until both sides are browned. Repeat with the rest of the batter until it’s gone!
I topped mine with my Raw Cacao Tahini sauce, directions as follows:
Ingredients:
- 1/2 tbsp raw cacao powder
- 1/2 tsp granulated sweetener of choice
- 1 tsp tahini
Directions:
In a small bowl, combine the cacao powder and sweetener and add a small drizzle of warm water, stirring until the cacao powder reconstitutes and the sauce is smooth.
Add the tahini, then add more warm water, stirring constantly, until pourable.
