At Blue Smoke on the Bay, the atmosphere shifts entirely. Centred around a spectacular three-metre double wood-fired grill, the open kitchen becomes part of the performance as chefs prepare aged steaks, garlic-buttered lobster, sticky Korean ribs and tandoori chicken over sustainable British elder, birch and oak.
