A tasting menu that draws inspiration from Chef Sato’s Japanese and European heritage, Humble chicken delivers a kitchen-theater experience. The menu offers a perfect balance of flavours and artistic presentation, creating a captivating and immersive culinary journey.
The evening began with a delightful selection of snacks. The Mussel with Kosho Ponzu and Avocado was a refreshing bite, with the briny mussel complemented perfectly by the tangy ponzu and creamy avocado. The Persimmon, Foie Gras, and Hazelnut offered an unexpected but harmonious combination, with the sweetness of the persimmon balancing the rich foie gras.
The Beef Tartar with Spicy Miso and Bone Marrow elevated traditional tartar with an extra layer of umami from the miso and luxurious bone marrow. Meanwhile, the Chicken Nanban provided a delightful crispy bite, and This Little Piggy was a playful, flavourful dish that left a lasting impression.
The Mum’s Favourite dish was a comforting and decadent blend of Fontina Cheese, Chestnut, and Potato—a rich, creamy experience that felt like a warm hug in every bite. Following this, the Shokupan with Australian Winter Truffle, Chicken Liver Parfait, and Parsley was an indulgent highlight, with the earthy truffle and silky chicken liver parfait melding beautifully on the fluffy Japanese milk bread.
Moving on to the Sashimi, the chef’s selection from the ocean was a fresh and expertly prepared assortment, showcasing the natural flavours of each cut. Next came the Dashi, a delicate broth featuring Wild Black Seabream, Seaweed, and Shiitake. The seabream was tender and perfectly cooked, while the seaweed and shiitake added depth to the soothing dashi broth.
The Sukiyaki with Short Rib, Cévennes Onion, and Crispy Egg was a standout, with the melt-in-your-mouth short rib and the sweetness of the onions complementing the rich broth, all brought together by the crispy egg.
To cleanse the palate, the Sofu Sencha from Shizuoka offered a delicate yet refreshing note of green tea, preparing you for the final indulgence. For dessert, the Cheesecake Purin was a delightful end to the meal, offering a smooth, creamy texture with just the right amount of sweetness, creating perfect satisfaction.
